Vegetables are a beautiful thing.

Years ago, I began leaning more vegetarian in my diet. While my vegetarian leanings aren’t perfect, I definitely appreciate the thought and hard work that goes into every great vegetarian recipe and book I uncover.

Here are four sites that help keep my head focused and my stomach happy.

1. The First Mess

The First Mess provides readers with a peek at what’s important to blogger and author Laura Wright: “cooking with natural, plant-based foods, eating seasonally, and sharing wholesome meals with the people in my life.”

“Living simply, cooking, and staying connected to the earth have always been at the heart of fine living for me, celebrating the community and its efforts,” Wright says. “A meal is nothing to take for granted, and this blog is a greater reflection of that simple idea.”

Posts I enjoyed include Grilled Pizza Portobellos with Lemon-y Cashew “Ricotta” and Vegan Grill Guide.

2. Vanilla and Bean

I cannot tell a lie: My weakness is sugar.

Vanilla And Bean features sweet and savory creations. Traci York is the brain behind the blog; she’s a 40-something-year-old from Washington state.

“I’ve always loved to cook good food yet it hasn’t always been good and healthful,” York writes. “About 14 years ago, I made the switch to a mostly vegetarian lifestyle from a Texas born and raised meat centered, eat it at every meal, lifestyle. My switch to vegetarian eating began out of my concern for the consequences growing meat and harvesting unsustainable seafood has on our planet.”

Posts that caught my eye include Blueberry-Oat Flax Muffins (Gluten-Free and Vegan) and Green Olive and Egg Potato Salad.

Sherrie Castellano is based in St. Louis, where she works as a private chef and creates content and “develops recipes for like-minded brands.”

In 2013, Castellano started With Food + Love to share her passion for wellness, food and drink, storytelling, and photography.

Posts with recipes I’ll be cooking ASAP include Broccoli Stem Slaw with Snap Peas + Basil Cilantro Aioli and Roasted Watermelon Radishes with Herbed Tahini Sauce.

4. Naturally Ella

The Naturally Ella blog allows you to make a recipe, explore an ingredient, cook with components, and plan your meals.

“Naturally Ella answers the question we all ask ourselves everyday: ‘What’s for dinner?’” the blog says. “It’s also the answer to every question you’ve ever had about substituting an ingredient, making your own pantry items, cooking grains (of all kinds), shopping for produce —and much, much more.”

Interesting posts include Summer Vegetarian Paella and Tomato Sandwich with Olive Tapenade and Hummus.
